The sharpener is an old trade and it is nearly gone

The afilador used to go street by street with a whistle that everybody recognised, sharpening knives and scissors on a wheel mounted on a bicycle. In most Spanish towns that sound has disappeared entirely, and where the trade survives it is usually attached to something else, as it is here.

If you live here, it is worth using: a properly sharpened kitchen knife lasts decades and costs a fraction of replacing it. And if you are visiting, listen out for the whistle in the streets behind the promenade. It is one of the few sounds of the old town that has not been recorded and put in a museum yet.
